Heat a little oil in a large pan and fry the chicken until browned. Season with salt and pepper. Pour over
the cognac or ouzo into the pan and set the pan alight with a match. Quickly add the basil before the
alcohol evaporates. Take the chicken out of the pan and place in an ovenproof dish.
In a bowl, beat the egg yolk with the MEVGAL Dairy Cream. Check seasoning and add more if
necessary. Pour the egg and cream mixture over the chicken.
Place the cubes of MEVGAL PARADOSIAKO Kasseri Cheese on top of the chicken and put the dish
under the grill for 5 minutes.
