Preheat the oven to 170˚C.
In a bowl, mix the MEVGAL Hard Cheese with the olive oil. Slowly add the flour, mixing as you go, and finally the two egg whites. Lay a sheet of greaseproof paper on top of a baking tray and ladle spoonfuls of the mixture on top of the sheet, being careful to keep a distance between them. Wet your hands and press the dough lightly with the your palms of your hands before transferring to the oven and baking for five minutes.
As soon as you take them out of the oven, place the soft, warm biscuits over a wine bottle so that they take on the curved shape of roof tiles.
