Preheat the oven to 200˚C.
Heat the oil in a pan and fry the onions and spring onions for 4–5 minutes, stirring well. Add the herbs and continue to cook for a few minutes, or until the liquid has evaporated.
Remove from the heat and as soon as the mixture is cool, add the semolina, crumbled MEVGAL Manouri Cheese and MEVGAL Feta Cheese, seasoning and eggs.
Lay one of the puff pastry sheets on a surface and place half the filling on it lengthwise. Roll into a cylinder and place on a greased baking tray. Repeat the procedure for the second puff pastry sheet and the rest of the filling. Brush the rolls with the egg yolk and bake until browned and crisp. Serve cut into generous slices.
