Preheat the oven to 200°C.
In a bowl, beat all the batter ingredients until smooth. Leave to rest for 10 minutes in the fridge. Heat a little butter in a non-stick frying pan and cook the pancakes for 10 minutes on both sides.
Now prepare the filling. Make a béchamel as follows: heat the butter in a saucepan and add the flour, stirring vigorously. While still stirring, pour in the MEVGAL Fresh Milk gradually until the sauce thickens. Add most of the MEVGAL Makedoniko Light Semi-Hard Cheese, stirring as you do so, and finish with the nutmeg and a little salt and pepper. Take off the heat as soon as the béchamel thickens.
Fill the pancakes with the sauce and place in a buttered baking dish. Sprinkle with the remaining cheese and bake in the oven until brown.
