Boil the potatoes for about 12 minutes and drain.
Heat a little oil in a non-stick frying pan, add the bacon and onion, and fry until golden.
Preheat the oven to 210˚C. Cut off the top of the potatoes at about two-thirds of their height. Scoop out the insides, leaving about 1cm thickness. In a bowl, mash the insides of the potatoes with a fork, then add the MEVGAL PARADOSIAKO Kasseri Cheese, spring onions, onion and bacon mixture and the MEVGAL Dairy Cream. Season and fill the potatoes with the mixture. Bake for 30 minutes.
