To make the preserved lemons: put the lemons in a plastic bowl and sprinkle with the coarse salt. Cover and leave for 12 hours. Steam the lemon slices for 5 minutes and then transfer to a glass jar. Cover with olive oil, stir and then leave to marinate for three weeks. The lemons will keep in the fridge for two months. They are very aromatic and are a perfect accompaniment to chicken or fish; or they can be cut into cubes and used in sauces.
For the marinated chicken: heat a little olive oil in a frying pan and fry the chicken. As soon as the chicken browns, add the lemons and MEVGAL Feta Cheese and cook for another 5 minutes.
