Preheat the oven to 180˚C.
Heat half the oil in a saucepan and add the meat. When it has browned on all sides, deglaze the pan with the wine. Season and allow to simmer for 1 hour.
Heat the rest of the oil and gently fry the onions, garlic and peppers for 2–3 minutes. Add the tomatoes and a squeeze of lemon and bring to a fast boil for 10 minutes. Place the meat and the onion and tomato mixture onto a square of greaseproof paper. Sprinkle on the MEVGAL Kefalotyri Cheese, season, and close the paper tightly.
Place the parcel in a buttered baking tray and bake for 45 minutes. Once cooked, open the greaseproof paper carefully (the steam inside the parcel will be hot) and sprinkle with the finely chopped dill before serving.
