Preheat the oven to 180–200°C.
Heat a little oil in a non-stick frying pan and fry the onions and spring onions until softened. Deglaze the pan with the wine, boiling until the liquid has completely evaporated. Allow to cool.
Add the MEVGAL PARADOSIAKO Kasseri Cheese, oregano or throumbi, peppers and olives to the onions and stir well. Finally, add the eggs, a little seasoning, and stir well.
Place two sheets of the filo pastry on a level surface, one on top of the other, and brush with olive oil. Spoon the filling onto the top of the two sheets in a strip and wrap into a roll. Place the roll in an oiled baking dish. Repeat the procedure with the rest of the pastry sheets and filling. Place the rolls next to one another in the baking dish and bake until crisp and browned.
To serve, cut each roll into sections 10–12cm in length.
